MANSFIELD, PA— The senior Nursing class at Mansfield University engaged in a service learning project at the Food Bank of the Southern Tier in Elmira Heights, NY recently.
As part of their Community Health Nursing Course, the students, under the direction of Nursing faculty members Christine Varner, Marion Leljedal and Ellen Reynolds, spent the day at the Food Bank learning about the challenges of those in the community who lack resources for food.
Students and faculty participated in the “Hunger 101” simulation exercise run by the Food Bank staff. This exercise challenged them to figure out how to purchase the most healthy food choices possible for their simulated “families” within a very restricted budget, which for many families in the area is a reality.
The MU students and faculty volunteered at the Food Bank that same day.
